BEHIND THE PRODUCT: The name "Chateaubriand" originates from France and traditionally refers to a 'thick tenderloin of beef.' It is believed to be named after the 19th-century Romance Writer, François-René de Chateaubriand, who was famously passionate about this cut of beef. SERVING SUGGESTIONS: For the perfect Chateaubriand, trim and cut the beef tenderloin steak (350-500g) to retain only the center cut. At room temperature, season with salt, pepper, and olive oil. Sear on a hot pan for 5-10 seconds on each side, then reduce the heat and cook for an additional 4-5 minutes. Serve with either a classic bearnaise sauce or with roasted potatoes for a delightful meal.
OUR BEARNAISE SAUCE RECIPE: To prepare a delicious bearnaise sauce, combine 28g of shallots, 55g of tarragon, 85g of chervil, salt, pepper, and 4 tablespoons of vinegar in a pan. Reduce the vinegar by two-thirds. Remove from heat, add 5 egg yolks, and on low heat, gradually whisk in 170g of butter until the sauce is smooth and creamy.
